tirem ken padaw

For the nth time, we’ve had this not so early but not so late breakfast in Sta. Teresita, Cagayan when we stopped over on the way to a writers’ meet in Gonzaga town. We were feted again with water bounties, this time with tirem, and that obligatory jumping salad of kilawen-sized padaw

This is tirem (oysters), freshly shucked from the shell and partially blanched, spiced with just calamansi squeezes:

And this is live padaw literally jumping, just dunk it in calamnsi juice and salt and put it right into your mouth:
